4 Day Cold Soak, 10 Day Primary Fermentation, 13 Day Extended Maceration, ML in Barrels
Aromas of Blackberries, butterscotch, and anise. Flavors of dark fruits, black cherry, and spice. Full bodied profile with plenty of grip and length. A warm, dry spring and growing season resulted in an early harvest in 2015. There was significantly less fruit than the 2016 harvest (and annual average) but the concentration of flavors and tannins was much higher.
